A new Murfreesboro family business officially opened Thursday on Rutherford Boulevard in the Wal-Mart shopping center. About a half-hour before O.K. Jose Tex-Mex Restaurant opened, Roberto Romo called his family and staff together where they formed a circle, joined hands and prayed.
WGNS' Bart Walker did part of his morning broadcast from O.K. Jose, where Roberto told him how they slow-cook many of the items to seal-in the flavor. With the Romo family, slow is 10 hours. He also proudly shared their technique of using healthy cooking techniques, combined with fresh vegetables and meats--all with an emphasis on quality.
Roberto Romo (left photo) said, "We love America and know how fortunate we are to live in a country that those before us fought to create. No matter what economic challenges arise, people need to realize they can work hard and get themselves out of a problem."
On opening day, a Mariachi band set the mood for the Tex-Mex food that was being served. Bart said, "All of a sudden I heard a great singer and looked around to see Roberto serenading his wife with a love song."
Walker then spoke with Roberto's daughter Rosa, who was acting as a family hostess and greeting guests at the door. He asked if she was surprised at all her father was able to do? She replied, "I used to be, but he can do anything he sets his mind to. I look at him as really being a Super Dad".

O.K. Jose Tex-Mex Retaurant is owned by to musical friends and both of their families are involved in the operation of this Murfreesboro eatery. Jose Onate, who is well known in the Hispanic musical world for his accordian polka music CLICK TO HEAR and Roberto Roma, who along with his brothers, had a popular vocal group in Mexico. Jose's son Aron Onate along with Roberto's adult children: Roberto, Jr., Sergio and Rosa are all helping with this new Murfreesboro family business.
